Gluten-Free White Chocolate Oatmeal Bars


1 cup softened butter (2 sticks)
1 cup brown sugar
3 eggs
1 1/2 teaspoons vanilla
2 cups oats (use gluten free)
2/3 cup brown rice flour
1/3 cup potato starch
1 teaspoon xanthan gum
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cups raisins or dried cranberries
4 ounces chopped white chocolate

Step 1. Preheat oven to 350 degrees Fahrenheit. Grease a 9x13 baking dish.
Step 2. Cream butter and brown sugar in a large bowl. Beat in the eggs and vanilla.
Step 3. In a medium bowl, mix oats, brown rice flour, potato starch, xanthan gum, baking powder, baking soda, and salt.
Step 4. Stir dry ingredients into the wet ingredient mixture. Then add the raisins and chopped white chocolate.
Step 5. Press the dough into the prepared pan. Bake for 30-35 minutes.
Step 6. Let cool. Then cut into bars. Enjoy!

  2. These were delicious! I'd like to make it using traditional flour ingredients since nobody in my household needs to be gluten-free. Any ideas?

    1. Use one cup of wheat flour instead of the brown rice flour, potato starch, and xanthan gum. Enjoy!
